Just Another Meatless Monday.....

When I decided to do The Greenprint Project* I knew it was going to be extremely difficult for me. Let's be honest here, my main reason behind doing this is to possibly win Beyonce concert tickets for life! It's just an added bonus that it'll help the planet and help me live a healthier lifestyle. There were a few different options for the Greenprint Project, which ranged from eating a plant-based breakfast every day to eating plant-based every single day. After weighing my options, I choose Meatless Mondays!

This may seem simple to you, but to me it's no small feat. It's the third week and the first time I've successfully gone fully vegan. I didn't drink milk once these past three Mondays (which is a huge victory on it's own), but I did eat cheese for the first two weeks. I was really down on myself for not being able to remain completely plant based, so I decided to plan ahead for this week. Surprise, surprise, it actually worked. Everything didn't go exactly according to plan, I wound up eating oatmeal twice, but whatever it was completely vegan!

I was especially proud of my dinner. I made zucchini with linguini, a recipe my mom's been making since I was little. It's definitely grown on me through the years. As in this is the first time I've eaten the tomatoes and onions.... yes I'm that (or was) picky. It was a simple recipe to make, and it actually tasted almost just like my mom's. My fiance who was not too excited about my vegan pasta, wound up really enjoying it.

I'm already planning ahead for next week. My goal is to eat an actual lunch, not just oatmeal again because I couldn't think of something better. I'm going to search Pinterest for some easy recipes I can make the night before - this time I'm actually going to make them. I'l make sure to keep you posted. Zucchini with Linguini Recipe - Be warned, my mom doesn't use measurements so I don't either.

Ingredients: 

  • Zucchini
  • Linguini
  • Garlic
  • Onion
  • Diced Tomatoes - I used canned
  • Olive Oil
  • Oregano
  • Basil
  • Crushed Red Pepper

Directions
  • Cut up zucchini and place to side. 
  • Mince garlic and chop onions. 
  • In a pot, put some olive oil and saute garlic and onions for about 5 minutes or so, making sure not to burn garlic. 
  • Add zucchini and saute for another 5 to 10 minutes.
  • Add oregano and Basil 
  • Sprinkle with crushed red pepper to taste - add more or less depending on preference
  • Add diced tomatoes. 
  • Cover and let cook until zucchini is soft.
  • If you want, you can add a few handfuls of grated cheese (when not going for a vegan meal)
  • Serve over linguini

Orange Banana, Kale Smoothie Recipe

I've gotten back into the routine of starting my morning off right with a smoothie. My favorite breakfast smoothie is Orange Banana and Kale. It tastes delicious and gives me a good boost of energy for the day. Making smoothies also enables me to get more servings of fruits and veggies in, something that I struggle with. If you've never tried making a smoothie, or are afraid of the green like I once was; this one is a good place to start! I prefer smoothies over juicing because you get more fiber and it's more enjoyable to drink. I use my NutriBullet to make all my smoothies - I love it!  If you don't have a NutriBullet, you can use a blender to make your smoothie. Ingredients: 1 Orange  2 to 3 stalks of Kale. Finding the right vendors

When we started looking for vendors, I scoured the internet but mostly I was planning on relying o recommendations from friends. Turns out this wasn't as great a plan as it sounds. Although I was able to get some great recommendations, we kept thinking we could find a better price. We stayed diligent and were able to find great vendors at a fraction of the cost of what some others had paid. So the best advice I can give you is to keep looking until you find a great vendor at the right price. It may seem impossible but it's not! When it came to our photographer, I knew exactly who I wanted. This amazing photographer that is the sister-in-law of my Fiance's best man. I've had my heart set on them photographing my wedding since I met them and started following their page.
